Rojas spearheads Tallulah’s culinary artistic vision. He originates from El Paso, Texas and is a graduate of the Culinary Art Institute of Dallas. Rojas has held positions As Executive Chef of The Sunset Restaurant in Malibu, California, Sous Chef at Joel Robuchon at the Mansion in Las Vegas and Chef de Partie at Alain Duccase’s restaurant, Mix, in the Hotel at Mandalay Bay.

Some of his earlier career tours were working under Chef Rick Boyer at 27 Ocean Blue of Boca Raton as well as the Four Seasons in West Palm Beach.

His passion for food was sparked at a young age by chef sean nugent and inspired to hone his skill by chef Michael scott.
